WHY MYCELIUM?

Alternative proteins are already part of the food industry, with a wide presence of meat analogues created based on vegetable protein, cell cultures or fermentation (yeasts and bacteria).

Fungal mycelium is a step further, a midpoint between animal and vegetable protein with great possibilities that elevates fermentation technology to the next level. Although knowledge about fungi is still limited, since there are more than 700,000 species in the world, the global food industry is already working on the development of mycoproteins that will give more profitability to the production of meat analogues.
