Regulation (EC) 2073/2005 establishes the microbiological criteria applicable to foods produced and marketed in the EU. The regulations, developed on the basis of the principles set out in the Codex and as part of the ‘Hygiene Package’, meant a paradigm shift in food safety management. Since its entry into force on 1 January 2006, it has been modified and corrected to incorporate and adapt to new methodologies and knowledge on microbiological hazards and risks. Currently, its application continues to be a challenge.
The aim of this day is to deepen in some aspects of the Regulation (CE) 2073/2005, through a practical vision and applied from different points of view, in order to contribute useful elements for the economic operator, responsible for ensuring and documenting compliance.
