The regulations, developed on the basis of the principles set out in the Codex and as part of the \u2018Hygiene Package\u2019, meant a paradigm shift in food safety management. Since its entry into force on 1 January 2006, it has been modified and corrected to incorporate and adapt to new methodologies and knowledge on microbiological hazards and risks.
